Mimolette, by the way, gets its good looks from spending a long time being aged in a cave with cheese mites eating holes on its roundish surface. The FDA doesn't like the idea. They are not big on raw milk cheeses to start with.
In 2013 the FDA banned Mimolette from sale in the USA. Today you can shop for it in the finest cheese shops. Mimolette is good as a snacking cheese with fruit, bread, crackers and if you like beer or wine. It's a good cheese for a novice cheese eater.
